MUSIC CITY PROCESSING provides fat, oil and grease recycling and processing services to business owners including grease trap and interceptor inspection and maintenance.
A grease interceptor is a device that is installed outside the building to separate and retain grease and solid materials from the waste-stream while allowing the balance of the liquid waste to discharge to the wastewater collection system by gravity. The capacity of the interceptor provides adequate time so that the wastewater has time to cool, allowing any grease time to congeal and rise to the surface where it accumulates until the interceptor is cleaned.
Poorly maintained grease removal devices are the cause of frequent backups, spills and increased maintenance costs (and possibly fines) for the establishment that owns it. Establishments that generate grease waste should contract with a grease waste hauler company for service. Interceptors should be pumped dry and scraped down to remove grease from the sides and baffle walls inside the unit each time the interceptor is pumped out. They should be serviced on a routine basis and in most cases no less
that quarterly.
As with many businesses, although there are many grease haulers that offer reliable, affordable and environmentally-minded service, there are also haulers that are unscrupulous. These haulers commit a variety of unethical and illegal practices which can result in fines for the food establishment. These
practices are:
Pump-and-Dump: the hauler dumps a full load of grease wastewater from another food establishment into the second establishment’s grease interceptor. It appears that the hauler is pumping, however they are first dumping IN to the interceptor causing the trap to overflow into the collection system.
Skimming: the hauler simply skims the surface of the wastewater, which does not remove the grease and solids on the bottom of the interceptor. Only a “full-pump” is the correct and legal method.
After a grease trap/interceptor is pumped dry, it will begin to fill with water until it reaches the trap outlet line and then flows into the sewer. Grease will again begin to form on top. This is the proper way for a grease trap to work. There are some dishonest pumpers that attempt to rip off restaurant companies through misleading and sometimes downright lies. These pumpers tell the restaurant employee, manager and/or owner that the grease trap was improperly pumped or that it needs to be pumped more often.
